Greddy makes thick head gaskets . What your head gasket clearance in mm? You might get away with it by getting a thicker head gasket but they get kind of expensive.

Check out these gaskets

Factory Honda gaskets are already 3-layer. What pistons are you running and did the machine shop tell you how much was took off? Also if you installed the cams with the notch facing down then you are not goin to be able to spin the cams 180 degrees to get them to face up since its an interference engine. Try removing the cams and put them back with the timing marks facing upwards, install the belt turn the engine over with a wrench and see if they still hit. But definately check with the machine shop first.
